Our Dorper lamb is premium quality Fresh Australian Range Fed Lamb and Milk Fed Lamb sourced from the prime lamb production areas of South Eastern Australia. Our lamb is processed by two of Australia’s leading lamb processors with a large number of lambs sourced directly from leading grower’s groups. These growers produce lamb recognised as the finest available and they ensure we have a reliable year-round supply of quality lambs. Hand-cut and hand-trimmed by the El Gaucho butchers it is a remarkable Halal certified and mouth-watering lamb chop.

How to Cook
COOKED TO PERFECTION
1. You can season the lamb chops before cooking, but a premium quality meat itself has a naturally delicious taste, so a bit of salt to enhance it is enough.
2. Preheat your pan to medium to high heat. Put a bit of olive oil (optional).
3. Add the lamb chops and let the heat of the pan sear the meat. Keep turning to ensure even cooking.
4. Take the lamb chops out of the pan when it reaches your desired doneness. Use a meat thermometer to check the meat’s temperature (optional).
Chef’s recommendation:
Rare 60°C | Medium Rare 60–65°C | Medium 70°C
